 St. Patrick's Day originated as a religious feast day in honor of St. Patrick, the patron saint of Ireland. Over time, it evolved into a global celebration of Irish culture, with traditions such as wearing green, attending parades, and indulging in Irish food and drink. In the United States, St. Patrick's Day has become a beloved holiday celebrated by people of all backgrounds, with cities across the country hosting vibrant festivities to honor Irish heritage.  Â

Ingredients:
- 1 1/2 pounds stewing beef, cut into chunksÂ
- 2 tablespoons all-purpose flourÂ
- Salt and pepper to tasteÂ
- 2 tablespoons vegetable oilÂ
- 1 large onion, choppedÂ
- 2 garlic cloves, mincedÂ
- 2 carrots, peeled and dicedÂ
- 2 celery stalks, dicedÂ
- 1 cup mushrooms, slicedÂ
- 1 tablespoon tomato paste 1 can (14.9 oz) Guinness stout and another two cans for you to drink while you make this!Â
- 1 cup beef brothÂ
- 1 tablespoon Worcestershire sauce 1 teaspoon dried thymeÂ
- 1 sheet puff pastry, thawed if frozen 1 egg, beaten (for egg wash)Â Â
Instructions
- Preheat your oven to 375°F (190°C).Â
- In a bowl, season the beef chunks with salt and pepper, then toss with the flour until well coated.Â
- Heat the vegetable oil in a large oven-safe pot or Dutch oven over medium-high heat. Add the beef in batches and brown on all sides. Remove the beef from the pot and set aside.Â
- In the same pot, add the chopped onion and cook until softened, about 5 minutes. Add the garlic, carrots, celery, and mushrooms, and cook for another 5 minutes.Â
- Stir in the tomato paste and cook for 1 minute.Â
- Return the beef to the pot and pour in the Guinness stout and beef broth. Add the Worcestershire sauce and dried thyme, then bring to a simmer.Â
- Cover the pot and transfer it to the preheated oven. Bake for 2 to 2 1/2 hours, or until the beef is tender and the sauce has thickened.Â
- Remove the pot from the oven and increase the oven temperature to 400°F (200°C).Â
- Roll out the puff pastry on a lightly floured surface until it's large enough to cover the pot. Place the pastry over the pot, pressing down around the edges to seal.Â
- Brush the pastry with the beaten egg for a golden finish.Â
- Using a sharp knife, make a few slits in the pastry to allow steam to escape.Â
- Return the pot to the oven and bake for 20-25 minutes, or until the pastry is golden brown and puffed up.Â
- Serve the Irish beef and Guinness pie hot, and enjoy! Don’t forget that Guinness came in a four-pack, so drink the other one now!
